Marble loaf cake

Ingredients

  • 175g unsalted batter, softened
  • 175g caster sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 150g self-raising flour, sifted
  • 1 tsp baking powder, sifted
  • 25g cocoa powder, sifted

Directions

If you do not have a loaf tin, no need to panic :) just place it into a small cake tin...and you will be fine!
  1. Using an electric whisk, cream together on a medium speed the butter and sugar for about 2 minutes, until light and fluffy
  2. Add the eggs one at a time, beating well between the additions. Add the vanilla extract and whisk for another 2 minutes
  3. Add the sifted flour and baking powder and fold gently into the mixture
  4. Divide the batter evenly between two bowls. Add the sifted cocoa powder into 1 bowl and gently fold in
  5. Pour the vanilla cake batter into a greased and lined loaf tin, then top with the chocolate batter (I decided to not do this, instead I alternated blobs of each batter in the loaf tin)
  6. Using the end of a wooden spoon, a knife or a skewer, swirl the mixture together to create a marbled effect
  7. Bake on 180 degrees Celsius for 45-50 minutes or until a skewer comes out clean. When done, leave to cool slightly then transfer onto a wire rack and remove the baking parchment

Can I just say, this cake tastes YUMMY! Enjoy it alone or with a cup of tea :)
