Moroccan style butternut squash rice

Ingredients

  • 1 tbsp sunflower oil
  • 1 onion, peeled and finely chopped
  • 2 garlic cloves, peeled and finely chopped
  • 2l pepper, de-seeded and cut into bit-size chunks
  • 1 tsp ground coriander
  • 1 tsp cumin
  • 1 tsp hot chilli powder (adjust according to your taste)
  • 1 tsp salt
  • 0.5 tsp cinnamon
  • 0.5 tsp black pepper
  • 1 pinch of saffron
  • 1 small butternut squash, peeled, de-seeded and cut into bit-size chunks
  • 1 cup long grain rice (I used basmati)
  • 2.25 cup boiling water
  • Optional: squeeze of lemon juice, handful of spinach leaves

Want something quick? Delicious? Tasty? Vegetarian? Moroccan style butternut squash rice is the one for you! :D (I should go into advertisement lol). We had a butternut squash hanging around, so I thought why not make something yummy out of it...
  1. Heat the oil in a pot, add the onions and garlic over medium heat, until the onions change colour
  2. In the meantime, grill the bell peppers until soft - then take off the heat and set aside
  3. Once the onions are cooked, add the ground coriander, cumin, chilli powder, salt, cinnamon, black pepper and saffron - mix altogether and leave for another minute or so
  4. Add the butternut squash and rice, gently stirring into the spices, followed by the boiling water. Stir gently and increase the heat. Once the water starts to boil, decrease the heat to low, cover, and leave to cook for at least 15 mins before checking on it using a fork (to ensure rice stays fluffy). Once the rice is cooked, place a towel over the pot, then put the lid over the towel and leave for 5 mins before serving

You may wish to add the spinach just before the rice completely cooks, until it wilts. Also, you may drizzle lemon juice just before serving. Tastes lovely mashAllah - and just so easyyyy to make! Enjoy :)
