Oreo no-bake cheesecake

  • 200g chocolate digestive biscuits
  • 50g unsalted butter, melted
  • 2 x 154g pack Oreos (original) + extra to decorate
  • 500g cream cheese
  • 500g mascarpone cheese
  • 100g caster sugar

Directions

I have always wanted to make an oreo cheesecake, and the other day a dear friend requested it...so I thought why not? Here it is :D
  1. Crush the biscuits into fine crumbs, then add the melted butter to them and mix well
  2. Place cling film on the base of a spring-form cake tin, then gently press the biscuit mixture on the base of the tin. Place in the freezer to set whilst making the cream cheese mixture
  3. Crush the oreos but not too fine, so that chunks remain - then set aside
  4. Using an electric whisk, cream together the cream cheese, mascarpone and sugar. Then gently fold in, using a spoon, the oreo mixture, a bit at a time until incorporated
  5. Spoon the mixture over the biscuit base, smoothening out the surface, then place in the fridge overnight to chill
  6. Once ready to serve, loosen the edges of the tin with a knife, then remove the cheesecake carefully. Decorate the top with oreos and serve :)

This is a really rich oreo cheesecake and tastes even better the next day! I hope you give it a go and enjoy :)
