Lemon drizzle cake

Ingredients

For the cake
  • 125g unsalted butter, at room temp
  • 175g 175g caster sugar
  • 2 eggs
  • 1 lemon zest
  • 175g self raising flour, sifted
  • 1 pinch of salt
  • 4 tbsp milk
For the syrup
  • 1.5 juice of lemon
  • 100g icing sugar
For the glaze
  • 1/2 juice of lemon
  • 150g icing sugar

Directions

This was a recipe request, and seeing as I love lemon in cakes, I couldn't wait to make it :)
  1. Cream together the butter and sugar, until smooth, using an electric whisk
  2. Add the eggs and lemon zest and continue whisking till combined
  3. Add the flour and salt, and fold using a spatula or spoon until well combined, then add the milk and fold it in
  4. Add the cake batter into a greased and lined loaf tin, and place in the oven at 180 degrees Celsius for 40-45 mins, or until the skewer comes out clean
  5. Meanwhile, make the syrup by placing the lemon juice and icing sugar in a small pot, and gently heating it until the sugar dissolves
  6. As soon as the cake is out of the oven, whilst it is still hot and in its tin, poke lots of holes in the cake and pour the syrup over it. Set aside and leave it to cool
  7. Once the cake is completely cool, take it out of its tin, mix the lemon and icing sugar for the glaze together until smooth and white (more icing sugar can be added if needed), then drizzle it over the cake
