Torta di pere (pear cake)

  • 1 cup plain flour
  • 0.75 tbsp baking powder
  • 0.25 tsp salt
  • 3 eggs, at room temperature
  • 115g unsalted butter
  • 0.75 cup sugar
  • 3 medium pears, peeled, and diced
  • 0.75 cup chocolate chunks (or chocolate chips)

So i thought i would give a fancy name for what is simply a pear and chocolate cake :) If you like pears, you will particularly enjoy this cake, because it goes really well with the chocolate chunks...
  1. Sift flour, baking powder and salt together in a bowl
  2. In a separate bowl, use an electric whisk to whip the eggs on high speed until pale and very thick (This will take around 10 minutes of whisking)
  3. Meantime, (this will require multi-tasking), melt the butter in a saucepan until the butter browns and starts smelling nutty (which will take between 6-8 minutes). Once this happens remove from the flame and keep in a warm place
  4. Add sugar to the whipped eggs, and whip for a further few minutes. Just as the egg-sugar mixture is starting to lose volume, stop whisking and start stirring
  5. Add 1/3 of the flour mixture, then half of the melted butter, whilst continuing to stir, and then a 1/3 of flour and remaining butter, then the rest of the flour
  6. Whisk until just barely combines (no more than 1 minute from when the flour is first added), then use a spatula to gently fold the batter until the ingredients are combined (it is important to not over-whisk or fold so the mixture does not lose volume)
  7. Butter a pan and dust with breadcrumbs (or flour) and pour the mixture into this pan
  8. Sprinkle the pears and chocolate chunks over the top and bake on 220 degrees celsius until the cake is golden brown and springs back to the touch, or a tester comes out clean (check after 30 minutes)

Please give this cake a go, the taste will pleasantly surprise you. You may wish to serve it with whipped cream or simply with a cup of tea. Enjoy :)
