Chicken thigh curry

Ingredients

  • 2 tbsp vegetable oil
  • 8 small onions, peeled and chopped
  • 10 garlic cloves, peeled and minced
  • 1 inch ginger, peeled and finely chopped
  • 1 tbsp salt
  • 1 tbsp coriander powder
  • 1 tbsp mild curry powder
  • 0.5 tbsp paprika
  • 0.25 tbsp turmeric
  • 0.25 tbsp chilli powder
  • 8 chicken thighs, de-boned and cut into bitesize pieces
  • 3 tomatoes, chopped
  • 2 tbsp tomato puree
  • 1 cinnamon stick
  • 3 bay leaves
  • 2 tbsp hot water (if needed)
  • 1 handful finely chopped coriander (keep some for decoration)

Directions

So I ended up buying some chicken thighs for the sake of it, and then wondered what to do with them. The good thing about the thigh meat is that it remains nice and juicy, so it goes perfectly in a curry...hence why I decided to make a chicken thigh curry.
  1. In a pot, heat the vegetable oil over medium heat. Add the onions, garlic and ginger until they gain some colour (5-7mins)
  2. Add the salt, coriander powder, curry powder, paprika, turmeric and chilli powder and mix well
  3. Add the chicken thigh pieces and mix well. Cover and leave to cook for 10 minutes (after a 5 min interval, mix it to avoid the mixture sticking)
  4. Add the tomatoes and tomato puree, alongside the cinnamon stick and bay leaves. Mix well, cover and leave for a further 10 minutes (mixing from time to time to avoid sticking)
  5. Check the consistency, if it is quite thick, add some hot water to ensure the mixture is not too dry and does not stick. Leave for a further 10 minutes
  6. Check the taste of the curry, if it is perfect, add the chopped coriander, mix in well and leave for a further few minutes before serving it up. Decorate the final served dish with more coriander

I served this up with white rice, which I cooked with a few pierced cardamom pods and star anise to enhance the flavour. Also had salad on the side. You could serve it up with bread instead, or whatever you wish! This curry turned out super delicious alhamdulilah! Enjoy :)
