Directions

I had never heard of chick pea flour until coming across the recipe for pakoras. Chick pea flour is also known as gram flour, or besan flour. I bought it from my local supermarket and couldn't wait to give these a try :)
  1. Combine the flour, lemon juice, salt, turmeric, garam masala and coriander in a bowl and mix together well
  2. Add five tbsp of cold water slowly to the mix, and beat until the mixture is smooth
  3. Add the chillies, courgette and carrots and continue to beat until well mixed. Slowly add a further 3 tbsp of cold water and mix well. The consistency should be like heavy cream, easily coating a spoon. Cover the batter and leave it to settle for 15 minutes
  4. Beat the batter again, and add the baking powder, mixing well
  5. Fry in hot sunflower oil on a medium heat, turning the pakoras using a slotted spoon, until golden brown on both sides
  6. Remove and drain on kitchen paper, and serve immediately whilst they are still hot

These actually tasted very good mashAllah....would go perfect served with a sauce of some sort, maybe a chutney or something. Definately making these again inshAllah...enjoy :)
