Easy chickpea curry

Ingredients

  • 1 tbsp olive oil
  • 2 onions, peeled and finely chopped
  • 2 garlic cloves, peeled and crushed
  • 1 small piece of ginger, peeled and grated
  • 1 tsp salt
  • 0.5 tsp cumin
  • 0.5 tsp ground coriander
  • 0.25 tsp turmeric
  • 0.25 tsp chilli powder
  • 0.5 tsp garam masala
  • 0.5 tsp black pepper
  • 0.5 can chopped tomatoes
  • 1 can chickpeas, drained and rinsed
  • 125ml hot water

Directions

I needed to make something super quick, as I had to eat then go out. So I made this chickpea curry, because it is super easy, super quick, and you can gobble it down and head off wherever you want :D
  1. Place the olive oil in a medium sized pot over medium heat until hot, then add the onions, garlic and ginger, turning down to a low heat and leaving to cook for around 10 minutes, until you see the onions have caramelised
  2. Add the salt, cumin, coriander, turmeric, chilli powder, garam masala, black pepper and mix well. Then add the tomatoes and chickpeas and mix well
  3. Add the water, mix and check for seasoning (adjusting according to taste). Cover the pot and leave to simmer on low heat for at least 10 minutes, before serving

The good thing about this is that it's so simple, yet tasty and filling. You could serve it with rice, or if you want something quick, serve with bread. Enjoy :)
