Chicken & tomato tagliatelle pasta

Ingredients

  • 1 tbsp olive oil
  • 3 medium onions, peeled and finely chopped
  • 5 garlic cloves, peeled and finely chopped
  • 2 boneless chicken breasts, cut into small bite size pieces
  • 1 tbsp salt
  • 0.5 tbsp black pepper
  • 0.5 tbsp cinnamon
  • 1 tsp paprika
  • 1 tbsp mixed herbs
  • 0.5 tbsp dried basil
  • 0.5 tbsp dried mint
  • 1 small red bell pepper, cut into small pieces
  • 3 tbsp tomato puree
  • 1 x 400g can chopped tomato
  • 0.5 can of sweetcorn
  • 1 chicken stock cube
  • 1 handful of olives, halved
  • 1 handful of fresh spinach, chopped
  • 1 X 500g tagliatelle pasta

Directions

I saw the tagliatelle pasta among the other types of pasta in the shop aisle, and it tickled my fancy :) So here is a nice and easy delicious way to enjoy a pasta dish.
  1. Heat the olive oil in a pot, add the onions and garlic, cooking over medium heat until the onions change colour (5-10 mins)
  2. Add the chicken and mix over medium heat until the chicken cooks 
  3. Add the salt, black pepper, cinnamon, paprika, mixed herbs, dried basil and dried mint. Mix well, then add the bell pepper and tomato puree, mixing well. Add the chopped tomato, sweetcorn, stock cube, olives, spinach and mix well. Leave for 10 minutes over medium heat to boil
  4. In the meantime, add the tagliatelle to boiling salted water for 7-9 minutes, then drain and put back into the pot
  5. Mix the tomato sauce with the tagliatelle, then serve

The pictures don't do justice to how the food actually tastes, but you will know what I mean when you try it! Enjoy :)
