Directions
Pasta, in my opinion, is one of the easiest dishes to make - especially when you want something quick, filling and available. So today I used whatever ingredients I had on hand, and created a concentrated caramelised onion base - with tomatoes that got a balsamic glaze - and I have to say, this tasted sooo good mashAllah! :)
- In a pot, heat the olive oil over medium heat. Add the onions and garlic and cook until golden and caramelised (around 5-7 mins)
- Add the tomatoes, mix well
- Add the salt and brown sugar and mix
- Add the balsamic vinegar, mix well then cook over medium/high heat until the tomatoes begin to disintegrate (around 4-5 mins)
- Add the mushrooms, bell pepper, red chilli and mix well
- Add the paprika, black pepper and cinnamon powder and mix well for a few minutes
- Add the chickpeas, chopped tomato, tomato puree and chicken stock cube. Add the olives and mixed herb then mix well. Leave over medium heat to boil
- In the meantime, in a different pot, add the pasta and add enough boiling water to immerse the pasta. Add the salt and olive oil and leave over medium heat to boil for 10 mins (or according to the packet instructions). Once done, drain the water and set aside ready to use
- Give the tomato sauce a taste to adjust as needed, you may need to add water if the mixture is too dry, you may also need to add more salt, or sugar, or balsamic vinegar. Once you are happy with the taste, add the spinach. Mix well, leave for 5 mins
- Add the pasta to the tomato sauce, mix gently and well
You can really taste the balsamic base to this pasta sauce, and the caramelised onions and garlic take this pasta to another level! Give it a try and enjoy! :)
