Easy and healthy penne pasta

Ingredients

  • 70g penne pasta
  • 80g green beans, trimmed and cut into thirds
  • 1 small onion, peeled and chopped
  • 1 garlic clove, peeled and crushed
  • 0.5 can chopped tomato
  • 0.5 can canned chickpeas
  • 3 tbsp canned sweetcorn
  • 1 handful of olives, de-seeded
  • 1 tbsp mixed herb
  • ground black pepper, according to taste

Directions

I got a request to make something 'student' friendly, someone who is on a budget and has no time to spare in the kitchen...so nothing too fancy or expensive. So I thought why not make an easy yet at the same time healthy penne pasta. This recipe contains no salt, no oil, no cheese - nothing naughty...only easy delicious ingredients, which you can feel free to add or remove anything that you wish. I have kept it basic because I wanted it to be as healthy yet flavoursome as possible.
  1. In a small pot, add the pasta and green beans, and add enough water to cover the pasta and beans. Put on medium heat for 10 mins
  2. In the meantime, add the onion and garlic, and cook in a non stick pot for a few minutes. When they start to dry up and begin to stick to the pan, add the chopped tomato, chickpeas, sweetcorn, olives, mixed herb and black pepper. Mix and leave on medium heat until the pasta is cooked
  3. Drain the pasta and beans, add to the sauce, mix well and ta daaaa!

It is as easy as that, not much to making pasta anyway. You wouldn't even realise there was no salt in this, and it's so quick, so filling, guilt free...and for all the students, very good for the pocket... Enjoy! :)
