Directions
My dear sister makes the yummiest macaroni cheese - so I used her recipe to make this. You are in for a treat :)
- Place the macaroni pasta in boiling salted water, and leave for 10-15 minutes, mixing in between to avoid sticking
- Meanwhile, in a large pot, melt the butter on medium heat. Add the flour and mix very well for a few minutes, until the dough-like mixture does not stick to the sides of the pot
- Slowly add the milk (1-2 tbsp at a time), mixing very well after each addition, until all the milk is well incorporated (if your arm begins to hurt, this means you are doing it correctly. This whole process will take you around 20 minutes)
- Once all the milk is added, add the salt and pepper, alongside the cheddar cheese and half the quantity of the mozzarella
- Mix until all the cheese has melted. Drain the pasta and add it to the cheese mixture, mixing well to ensure the pasta is coated
- Place the mixture into a deep roasting dish, then top with more cheddar cheese and the other half of the mozzarella cheese, then place in the oven at 200 degrees Celsius for 20-25 minutes, or until the top has become golden
