Sweet yet tangy tomato sauce with chicken

  • 2 tbsp olive oil
  • 3 medium onions, peeled, cut in half, then quarters
  • 10 garlic cloves, peeled and crushed
  • 4 small potatoes, peeled and cut into quarters
  • 2 x 400g canned chopped tomato
  • 1 x 100g tomato puree
  • 1 x 400g can red kidney beans
  • 6 mushrooms, cut into quarters
  • 1.5 tsp salt
  • 0.5 tsp cinnamon
  • 0.5 tsp black pepper
  • 3 tsp brown sugar
  • 1.5 tbsp pomegranate syrup (adjust according to taste)
  • 250g raisins
  • 1 baby chicken, cut into eight pieces
  • 1 tbsp tandoori spice

This is an easy and super delicious dish I made using ingredients I already have in the kitchen. I added sugar to give it that sweetness, yet pomegranate syrup to give that tangy kick. Just the smell from this dish made my dad come to the kitchen to 'taste test' it :D 
  1. Place the olive oil in a pot over medium heat, when the oil has heated up, add the onions, garlic and potatoes - and stir occasionally until the onions start to change colour (give it at least 10-15 mins)
  2. Add the can of chopped tomato, tomato puree, red kidney beans and mushrooms, then mix well
  3. Add the salt, cinnamon, black pepper, sugar, pomegranate syrup and mix. Leave for at least 20-30 mins over medium heat, or until the potatoes begin to slightly soften
  4. Add the raisins into the tomato sauce and mix. Add the sauce into a deep oven proof casserole dish, then rub the tandoori spice over the chicken and place the chicken on top of the sauce (do not press it down so that it gets covered in the sauce - leave it on top so that a crispy layer forms on the chicken)
  5. Cover the dish with foil and place into the oven at 210 degrees Celsius for 30-40 mins, then uncover the foil and leave for a further 15 mins (or until the potatoes have gone soft and the chicken has cooked)

It is difficult to describe the taste of this dish, because one spoonful is enough to give a burst of flavours. It's sweet yet has a tangy taste to it. You may wish to add or exclude whatever you like. Highly recommend you try Nosaiba's randomly made up dish!! Enjoy :)
