Ruz ib-haleeb (Lebanese rice pudding)

  • 6 cups whole milk
  • 1 cup white sugar
  • 1 cup rice
  • 2 cups hot water
  • pistachio, almonds, pine nuts as optional decoration (use whatever you have or none at all)

Directions

This is the lebanese version of a rice pudding. I am not sure in what way it differs from rice puddings made elsewhere. Nonetheless, I make this in loving memory of my dear grandma, who would make this for us with a loving caring heart. May Allah rest her dear soul.
  1. In a large pot (make sure it is clean from any remanence of previous cooking - scrub it well then pour hot water on it) add the milk and sugar, and bring to a boil over a medium heat, stirring as you go along
  2. Add the rice and water, then mix well. Cover the pot, and leave for 30 mins over medium/low heat, stirring in between (at least every 5-10 mins) to avoid the rice sticking
  3. Check if the mixture has thickened up and the rice is soft. If not, leave for a further 10 mins or until the mixture thickens up and the rice is soft
  4. Take off the heat and spoon the mixtures into individual serving bowls, topping with the nuts as decoration. Leave to cool outside, before placing in the fridge to fully chill

Tasty, sweet, simple and a lovely light dessert. Enjoy :)
