Fatoush salad

  • 2 garlic cloves
  • 0.75 tbsp salt
  • 1 small onion, minced
  • 2 lemons, juiced
  • 2 tbsp cider vinegar
  • 3 tbsp olive oil
  • 2 tomatoes, chopped
  • 3 inch cucumber, chopped
  • 2 radishes, chopped
  • 1 handful mint leaves, finely chopped
  • 1 iceberg lettuce, chopped
  • 2 pita bread
  • 1 tbsp sumac

A simple salad with a Lebanese twist - the dressing of a salad really brings a salad to life, and the toasted bread pieces in a fatoush is really something you will love.
  1. In a serving bowl, add the garlic and salt, and grind together to produce minced garlic
  2. Add the onion, juice of lemons, vinegar and olive oil and mix together
  3. Add the chopped tomatoes, cucumber, radishes, mint leaves and ice berg lettuce
  4. Meanwhile, peel apart the pitta bread to make four pieces altogether. Break the pieces apart into small chunks and lay them on an oven tray. Place in the oven for 5-6 mins on high heat or until lightly browned. Add the toasted bread to the salad once cooled, sprinkle the sumac and mix very well together
