Lebanese style corn fritters

  • 1 onion, finely chopped
  • handful of parsley, finely chopped
  • 1 can sweetcorn
  • 0.5 tbsp salt
  • 0.5 tbsp cinnamon powder
  • 0.25 tbsp black pepper
  • 3 eggs
  • 3 tbsp flour
  • 1 tbsp milk
  • splash of water - if needed

An easy side to the dinner table, or a perfect accompaniment to your mums favourite meal...fried fish!! This is the Lebanese way of making corn fritters, and it turns out very delicious mashAllah!
  1. In a bowl, add the onions, parsley, sweetcorn, salt, cinnamon and black pepper. Mix well
  2. Whisk together the eggs, then mix into the mixture inside the bowl
  3. Add the flour and mix well, followed by the milk. Add a splash of water if needed (literally a few drops) - otherwise the consistency should be perfect - not too solid - not too liquid
  4. Heat up frying oil, and drop a tablespoon of the mixture at a time into the hot oil. Leave for 4-5 mins to turn over, or once browned. Leave for a further 2 minutes on the other side, or until browned, then remove onto a plate with kitchen paper to drain off the excess oil - until ready to serve 

  I served it with fried fish, salad, chips and vegetables - absolutely delicious :D enjoy :)
