Adas mtabal (green lentil breakfast)

  • 300g cooked green lentils
  • 1 garlic clove, peeled
  • 0.5 tsp salt
  • 1 small onion, peeled and finely chopped
  • 1 pepper, de-seeded and chopped
  • 1 small tomato, chopped
  • 1 handful parsley, finely chopped (+extra for decorating)
  • 1 handful mint leaves, chopped
  • 2 lemons
  • 1 tbsp olive oil (+ extra for drizzling over the adas at the end)

For many, the sound of lentils at breakfast may be a little bit weird, but this is a nutricious Lebanese breakfast, which is guaranteed to keep you full for long. It is super delicious and quick to make. If you have already cooked a big batch of green lentils, you can place handfuls in containers/food bags and store them in the fridge/freezer, ready for use when needed. If you do this, making adas mtabal is super super quick. 
  1. If your green lentils have no liquid with them, add a little water (2-3 tbsp) into a pot, and heat the lentils through until boiled
  2. In the meantime, place the garlic and salt in a deep serving dish, and mash the garlic until minced
  3. Add the onion, pepper, tomato, parsley, mint leaves, lemon and olive oil, and mix until combined
  4. Add the heated lentils, and mix gently until all combined. Taste and adjust as needed (more salt, lemon juice, etc). Top with a drizzle of olive oil and extra parsley for decoration

Serve with pitta bread, and extra onion/tomato/mint/parsley etc. So simple and so delicious! Enjoy!
