For many, the sound of lentils at breakfast may be a little bit weird, but this is a nutricious Lebanese breakfast, which isÂ guaranteedÂ to keep you full for long. It is super delicious and quick to make. If you have already cooked a big batch of green lentils, you can place handfuls in containers/food bags and store them in the fridge/freezer, ready for use when needed. If you do this, making adas mtabal is super super quick.Â
- If your green lentils have no liquid with them, add a little water (2-3 tbsp) into a pot, and heat the lentils through until boiled
- In the meantime, place the garlic and salt in a deep serving dish, and mash the garlic until minced
- Add the onion, pepper, tomato, parsley, mint leaves, lemon and olive oil, and mix until combined
- Add the heated lentils, and mix gently until all combined. Taste and adjust as needed (more salt, lemon juice, etc). Top with a drizzle of olive oil and extra parsley for decoration
Serve with pitta bread, and extra onion/tomato/mint/parsley etc. So simple and so delicious! Enjoy!
