Yakhnit al fool - Green broad bean Lebanese stew

  • 1 tbsp olive oil
  • 300g meat cubes, bitesize pieces
  • 1 bulb garlic, peeled and minced
  • 1 handful chopped coriander
  • 0.75 tsp salt
  • 0.25 tbsp black pepper
  • 0.5 tbsp cinnamon
  • 900g frozen green broad beans (approx.)
  • 2.5 cups hot water (add more later if needed)
  • 1 chicken stock cube

It is healthy, it is easy and it is Lebanese! What more could you want? hehe... This is a Lebanese stew with minimal ingredients, fantastic flavour - and good nutrition!
  1. In a pot, heat the olive oil over medium heat, then add the meat cubes. Cover and leave to cook until the juices that come out of the meat dry up (maximum time 10 mins)
  2. Add the minced garlic and coriander. Mix well for a few minutes, then add salt, black pepper and cinnamon. Mix for a further 5 minutes
  3. Add the green broad beans, and either mix gently, or cover with a lid, and using both hands with oven mits, shake the pot to mix everything together (this avoids breaking the green broad beans). Leave covered over medium heat until the green broad beans gain some colour or begin to slightly soften (around 15 mins)
  4. Add the hot water (enough to barely immerse the green broad beans) and the chicken stock cube. Mix, then cover and leave over medium heat, mixing from time to time, until the green broad beans soften, and the meat is well cooked (around 45-50mins). If the mixture dries up, add more hot water and mix

Serve with white rice and enjoy the simplicity, yet tastiness of this dish! Enjoy :)
