Lebanese chicken soup

Ingredients

  • 1 boneless chicken breast
  • 6 cups of water (vary this amount depending on how many people you wish to serve)
  • 0.5 tbsp salt
  • 0.5 tbsp black pepper
  • 0.5 tbsp cinnamon
  • 6 tbsp tomato puree
  • 1 chicken stock cube
  • 0.75 cup rice, washed and drained
  • 1 handful of freshly chopped parsely

Directions

This is my all time favourite soup, no other soup has managed to take its number 1 spot! I have sent the recipe for this soup to many people, who requested it after tasting it, so I thought might as well post it up for everyone to try out. Unfortunately the internet isn't advanced enough for me to place a taster on the blog for you to try out before attempting the recipe! :)
  1. Boil the chicken in the water in a pot until they are well done
  2. Remove the chicken from the water, then add the salt, black pepper, cinnamon, chicken stock and the tomato puree to the same pot
  3. Once the water boils, add the parsley, rice and the chicken. Whilst the mixture boils mix every now and then so that the rice does not stick together
  4. After approximately 25 minutes, see if the rice has softened. If it hasn't then leave to boil for longer
  5. Once the rice is well cooked, check if the soup needs more water (it may have dried up over the boiling process), if so just add more water until you feel it is a good amount (i.e. looks like soup and not tomato rice)
  6. Check for seasoning, and if all is up to scratch then the soup is ready to go :)
