Raisin rice

  • 1 cup basmati rice
  • 1.5 cup boiling water
  • 0.25 cup raisins (+ extra for topping)
  • 0.5 tbsp salt
  • 0.75 tbsp cinnamon
  • 1 pinch of saffron
  • 1 splash of olive oil

I absolutely love raisins on top of my rice, so I thought why not make rice with raisins inside of it too! This is sooo easy, it will be ready in 20 mins.
  1. Wash and drain, then re-wash and drain the rice a couple of times, until the water is no longer cloudy. Place into a non-stick medium/large pot
  2. Add the boiling water over the rice, as well as the raisins, salt, cinnamon, saffron and olive oil, mix well 
  3. Bring the mixture to a boil, then reduce the heat to very low, cover and leave for 12-15 mins (at 12 mins uncover and check the rice using a fork, if it needs longer then leave it another few mins).
  4. Once cooked turn off the heat, place a kitchen towel on the pot then cover, and leave for 5 mins before serving. Top with extra raisins if you wish

I served this with yoghurt and sweet chilli sauce. A salad would also go very well. Super simple, it was done in no time, and a great dinner for any raisin lover! Enjoy :)
