Baamya (okra stew)

Ingredients

  • 250g meat cubes
  • 200g frozen okra
  • vegetable oil, for frying
  • 2 potatoes, peeled and cut into small cubes
  • 1 tbsp salt
  • 1 tbsp cinnamon
  • 1 tsp black pepper
  • 10 cloves of garlic, peeled and minced
  • handful of fresh coriander, washed and chopped without stalk
  • 4 tbsp pomegranate syrup
  • 2 lemons, juiced
  • 3 cups boiling water

Directions

One of my favourite dishes is baamya. I love the okra and the tangy flavour!
  1. Place the meat in a large pot on medium heat, cover and leave till cooked
  2. Meanwhile, deep fry the okra in the vegetable oil until light brown and remove onto kitchen paper to dry. Set aside for later
  3. Once the meat is cooked, add the potatoes, salt, cinnamon and black pepper and mix well. Cook for 5 minutes whilst covered
  4. Add the garlic and coriander, mix for a few minutes until the coriander wilts
  5. Add the pomegranate syrup and juice of the lemons, followed by the boiling water. Cover and leave for 15 minutes on medium heat
  6. When the potato is nearly cooked (make sure that it's not fully cooked), add the okra
  7. Mix, and leave for a further 5-10 minutes until the potato is fully cooked. If more water is needed, add at this stage
  8. When the dish is done, serve with rice or bread

If you like okras, you will love this meal. It isn't difficult to make, and the result is worth every minutes. Enjoy :)
