Banana, date & walnut loaf

Ingredients

  • 400g bananas (weighed with skins on)
  • 1 tbsp lemon juice
  • 300g self raising flour
  • 1 tsp baking powder
  • 125g caster sugar
  • 125g butter, melted
  • 2 eggs, beaten
  • 175g chopped dates
  • 50g walnut pieces
  • Optional: walnut halves and banana chips for decoration

Directions

If you like banana's, dates and walnuts, then you're going to love this recipe! Simple ingredients and easy steps...
  1. Peel and mash the bananas with the lemon juice
  2. Place the flour, baking powder and sugar in a mixing bowl. Add the mashed bananas, melted butter and eggs, then mix well
  3. Stir in the dates and walnut pieces, then spoon into a greased 1kg loaf tin (its base and two long sides also lined with oiled greaseproof paper). Spread the surface level and decorate with the optional walnuts and banana chips
  4. Place into the oven, on 160 degreed Celsius for 1 hour 10 minutes or until well risen and an inserted skewer comes out clean. Leave to cool for 10 minutes, then turn onto a wire rack and peel off the lining paper. Leave to cool completely before enjoying!
