Crispy fried chicken

Ingredients

  • 2 cups self-raising flour
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp sugar
  • 1 tbsp ginger powder
  • 1 tbsp garlic powder
  • 1 tbsp paprika powder
  • 1 tbsp tandoori powder
  • 0.5 tbsp chilli powder
  • 3 eggs
  • 0.5 cup milk
  • 2 tbsp water
  • 2 tbsp hot sauce
  • 1 tbsp paprika
  • 2 baby chickens, skin on, cut into eight pieces (get them ready cut if you like)
  • 1 sprinkle salt
  • 1 sprinkle paprika powder
  • vegetable oil for frying

Directions

Who does not like some crispy fried chicken? Delicious, crispy, spicy...with a juicy chicken when you crack through it.
  1. In a bowl, mix in the flour, salt, black pepper, sugar, ginger powder, garlic powder, paprika, tandoori and chilli powder
  2. In a separate bowl, add the eggs, milk, water, hot sauce and paprika and mix well with a fork
  3. Place the chicken on a plate or tray, and season with salt and paprika powder, both the top and bottom of the chicken pieces. Heat the vegetable oil in a deep pan over medium heat
  4. Get the seasoned chicken, place it in the flour bowl, coating the chicken, then place it in the egg mix bowl, add it back it in the flour bowl, coating the chicken. Shake off excess flour and place it in the hot oil
  5. Add a few pieces of chicken to cook at a time, turning the chicken after around 5-7 mins to brown both sides. Leave the chicken to brown both sides. I would suggest removing a batch and trying out one pieces to adjust your timings accordingly
  6. Remove the chicken pieces onto a paper towel to absorb excess oil, and cover with foil to keep the pieces warm ready for the entire batch to be complete

Unfortunately I just couldn't capture how crispy and delicious these chicken were, I was very disappointed with how the shots came out...still learning with this camera. I served with potato wedges, tabooli and humus. It was a big hit for the whole family, and no leftover chicken pieces remained (always a good sign). Enjoy :)
