This is perfect for the coming days of the blessed month of Ramadan, a nutritious tasty soup, which is so easy to make!
- Heat the oils in a pot, then add the onions and cook over medium heat
- In the meantime, place the cooked lentils, with the water you cooked them in, into a food processor, and whiz until smooth
- Place the lentils into the pot with the cooked onions, and mix well. Add the rice, water, salt and cumin and mix well
- You need to keep tasting to ensure seasoning is spot on, so if more salt or cumin is needed, keep adding more till just right. Also the water needs to be adjusted depending on how thick/runny your soup is. Keep the soup on the heat until the rice cooks (10-15 mins)
To maximise the flavour of this soup, place some lemon juice on the table to allow each person to drizzle lemon juice over their soup. Enjoy :)
