Vegetables in tomato sauce with tandoori spiced chicken

  • 2 tbsp olive oil
  • 6 onions, peeled and quartered
  • 6 garlic cloves, peeled and finely chopped
  • 1 inch ginger, peeled and finely chopped
  • 6 carrots, peeled and sliced
  • 3 sweet potatoes, peeled and cut into bitesize cubes
  • 4 potatoes, peeled and cut into bitesize cubes
  • 10 mushrooms, washed and quartered
  • 1 red bell pepper, de-seeded and cut into cubes
  • 1 tbsp salt
  • 0.5 tbsp black pepper
  • 0.5 tbsp cinnamon
  • 1 tbsp brown sugar
  • 0.5 tbsp paprika
  • 0.25 tbsp chilli powder
  • 0.5 tbsp coriander powder
  • 2 x 400g can chopped tomatoes
  • 0.5 cup water (add more if needed)
  • 1 chicken stock cube
  • 3 tbsp tomato puree
  • 2 tbsp pomegranate syrup
  • 1 x 400g can chickepeas
  • 1 baby chicken, cut into eight pieces
  • 1 sprinkle tandoori spice

On a day you want to make something easy, using vegetables you have on hand, yet keeping it healthy and filling, this could be the recipe for you! Not much to it, yet it is deliciously satisfying. You can use as many vegetables that you have on hand, I used what we already had in our kitchen :)
  1. In a pot, add the olive oil over medium heat. Add the onions, garlic and ginger, mixing well for 5 minutes
  2. Add the carrots, sweet potatoes and potatoes and mixing in well. Cook for a further 5 minutes
  3. Add the mushrooms, bell pepper and mix. Add the salt, black pepper, cinnamon, brown sugar, paprik, chili powder and coriander powder. Mix well 
  4. Add the chopped tomatoes, water, chicken stock cube and tomato puree. Mix well and leave to cook for 10 minutes
  5. Taste the mixture, adjust as needed, then add pomegranate syrup for a tangy kick. Cook for a further 5 minutes. Add the chickpeas to the mixture
  6. Transfer the vegetable mixture into an oven proof deep serving dish. Cover the chicken in tandoori spice, then place them neatly over the vegetables. Place into the oven at 220 degrees Celsius for 35-40 mins (check the chicken is done, as well as the vegetables before removing)

I made white rice, salad, and an option of yoghurt with this..and it was filling, delicious and healthy! Enjoy :)
