Fried chicken in breadcrumbs

  • 2 baby chickens, each chicken cut into 8 pieces
  • boiling water
  • 0.75 cup plain flour
  • 1 tbsp salt
  • 1 tbsp tandoori
  • 0.5 tbsp black pepper
  • 1 tsp cinnamon
  • 1 tsp garam masala
  • 1 tsp mixed herbs
  • 0.5 cup of milk
  • 1 tsp tandoori powder
  • 1 cup breadcrumbs
  • 0.5 tbsp tandoori powder
  • 0.5 tbsp black pepper
  • 0.5 tsp chilli powder
  • vegetable oil for frying

There is a variety of ways to make fried chicken, usually using eggs. But I do not use eggs, instead I use milk to act as the binding agent. It isn't difficult, maybe just a little fiddly with the hands, but I will try my best to explain below. Please note you can vary the measurements according to your needs. You may be shocked by the spices I add to the flour, but I tend to just add a little of everything to maximise the flavour :)
  1. Prepare the chicken, then place into the boiling water, and leave to boil for around 20 minutes. Remove and place onto kitchen paper 
  2. In a sandwich bag (if you have the ones that zip up, then that's a bonus), add the flour, salt, tandoori powder, black pepper, cinnamon, garam masala and mixed herbs and shake the bag
  3. Place a few pieces of chicken at a time into the bag, and shake to ensure all the chicken is coated
  4. In a plate, add the milk and tandoori, then mix. Take out the chicken piece and shake off any excess flour, then place into the milk and ensure milk covers the whole chicken
  5. Finally, in a final plate, add the breadcrumbs, tandoori, black pepper and chilli powder and mix. Place the chicken onto the breadcrumbs, and using your other hand or a spoon, cover the entire chicken with the breadcrumbs
  6. Place the chicken onto a wire rack to rest for at least 15 minutes before frying
  7. Once all the chickens have rested, heat up the vegetable oil (enough to cover at least half the chicken) on high, when the oil is hot enough, decrease the heat to medium, and place the chicken pieces, turning each piece every once in a while until well cooked
  8. Transfer onto kitchen towels to absorb the oil before serving

The chicken is served with chips and salad, and don't forget the good old ketchup :) The crust on the chicken tasted lovely. Enjoy :)
