Directions
This is the perfect soup for when it is cold and gloomy outside, something that is full of flavour yet also full of benefits to help keep you well, or help you get well soon! The ginger, garlic, turmeric, cumin are just some of the ingredients in this soup to act as the medicine for that cloudy day. A super delicious soup, perfectly balanced! I hope you give it a go and enjoy it as much as me and my family did.
- Add the olive oil in a pot over medium high heat. Once hot, add the onion, garlic and ginger and cook until the onion gains colour (around 5 mins)
- Add salt, cinnamon, paprika, cumin, black pepper, turmeric and ginger powder. Mix well
- Add the carrots and potato, mix and leave for a further few minutes
- Add the boneless chicken pieces, and mix well to coat them with all the spices. Leave until the chicken gains some colour
- Add the hot water, as well as the chicken stock cube, bay leaves and cinnamon stick over medium high heat and allow the soup to bubble away. Leave until the chicken cooks through, around 7-10 mins. Taste and check for seasoning (may need more salt)
- Remove the chicken pieces, leave to cool for a few minutes to make it easier to handle. Break the chicken into smaller pieces (I like bigger chunks in the soup) and add them back into the soup
- Add the parsley, leave to bubble for a few minutes
- Add the vermicelli and leave to cook for 5-7 mins. Adjust the water if needed depending on how much liquid you like your soup, taste for salt, then serve immediately
I cannot tell you just how perfect this soup is, it is soo delicious, yet a perfect pick me up soup that will give you that boost when you are feeling low or unwell. Highly recommended! Enjoy :)
