Fluffy cake

  • 4 eggs
  • 1 cup sugar
  • 0.5 cup vegetable oil
  • 0.5 cup of milk
  • 1 tsp vanilla extract
  • 3 lemon rind (you can add more or less as you wish)
  • 2 orange rind (you can add more or less as you wish)
  • 1.75 cup self raising flour
  • 2 tsp baking powder
  • jam, dessicated coconut and roasted pistachios for decoration

What makes this cake so good is that its steps are simple, the ingredients you probably already have, and it comes out nice, fluffy and tasting so good :)
  1. Crack the eggs into a bowl and add the sugar. Whisk together until the mixture is fluffy (the fluffier the better, so just keep going for as long as you can - for around 5-7mins)
  2. Add oil and milk into the same cup, then add this to the mixture
  3. Add the vanilla, followed by the lemon and orange rind, then whisk again
  4. Sift into the mixture the flour and baking powder, then fold the mixture gently yet thoroughly, ensuring the air bubbles remain in the mixture. Keep folding until the mixture is well mixed
  5. Oil a baking pan and add the mixture. Put into the oven at 200 degrees for around 20 minutes (or until a tester comes out dry)
  6. Take out of the oven and leave to cool for around 10 minutes, before turning upside down
  7. Cover with a layer of jam, followed by a layer of coconut and pistachios

This cake goes perfectly with a cup of tea :) If you like the lemon taste, add more lemon rind to the mixture, but the amount specified was just right in this cake. I hope you give this a go and enjoy :)
