Chilli con carne

Ingredients

  • 2 tbsp olive oil
  • 2 medium onions, peeled and chopped
  • 2 cloves garlic, peeled and finely chopped
  • 1 red chilli, chopped
  • 1 tsp thyme
  • 500g minced meat
  • 1.5 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 2 tsp paprika
  • 1 tsp oregano
  • 3 fresh tomatoes, chopped
  • 400g tinned chopped tomatoes
  • 150ml chicken/beef stock
  • 3 tbsp tomato puree
  • 1 cinnamon stick
  • 1 bay leaf
  • 400g kidney beans, drained and rinsed well

Directions

This chilli con carne tastes so good and is worth trying if you haven't before :)
  1. Heat the oil in a large pot, then add the onions, garlic, chilli and thyme and leave until the onions change colour (become more transparent)
  2. Meanwhile, in a different pot, cook the minced meat over medium heat until it becomes brown in colour
  3. Add the salt, black pepper, cumin, paprika and oregano to the onion mixture, and stir for a few minutes. Then add the minced meat to the onions and mix well
  4. Add the fresh and tinned tomatoes to the mixture, and cook over medium heat for 5 minutes (so that the liquid reduces a little)
  5. Pour in the chicken/beef stock and add the tomato puree and mix. Add the cinnamon stick and bay leaf and bring to the boil, before leaving to simmer until the sauce thickens (takes between 15-20 mins)
  6. Add the kidney beans and leave to cook for a further 5-10 mins so that the beans absorb all the flavours. Taste for seasoning before serving with rice
