Maftoul (Palastinian couscous) with chicken and chickpea broth

Ingredients

  • 3 tbsp olive oil
  • 1 baby chicken, skinless, cut into eight pieces
  • 1 tsp salt
  • 1 tsp all spice mix
  • 0.5 black pepper
  • 7 cups boiling water (adjustable according to need)
  • 3 tbsp tomato puree
  • 4 bay leaves
  • 1 cinnamon stick
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp cinnamon
  • 2 medium onions, peeled and chopped
  • 5 garlic cloves, peeled and crushed
  • 1 can chick peas, drained
  • 2 cups maftoul

My sister had seen a packet of maftoul in the shop, bought it and left it on my desk with a note saying: 'I challenge you to make a delicious dish with this ingredient'. I smiled at seeing this, and couldn't wait to fulfil this challenge! So here it is, a delicious dish which uses maftoul, a larger version of couscous. 
  1. Heat the olive oil in a pan
  2. In the meantime add salt, all spice mix and black pepper to the chicken and rub in to coat
  3. Add the chicken to the hot oil, and cook over medium heat until it is browned from both sides (around 20 mins)
  4. In the meantime, add the boiling water to a large pot, followed by the tomato puree, bay leaves, cinnamon stick, salt, black pepper, cinnamon, one of the chopped onions and the garlic cloves. Leave to boil, then add the chicken to the pot when it is ready, followed by the chickpeas. Cover and leave over medium heat (during the cooking process, check the taste and adjust the seasoning as required)
  5. To the pan which you had cooked the chicken, add more olive oil if necessary, otherwise add the maftoul and the other chopped onion, and mix until the maftoul becomes brown and nutty
  6. For every cup of maftoul add two cups water (use the water from the chicken pot). Mix, then cover and cook over low heat until the water is absorbed (around 20mins)
  7. Fluff the maftoul with a fork to check it is cooked and avoid it from sticking. Turn off the heat from both the chicken broth and the maftoul
  8. Plate up by adding the maftoul onto a serving plate, topped by the chicken broth with the chickpeas, and the chicken piece(s)

Add more of the chicken broth when serving. This dish was very delicious, and so filling! I actually want to buy maftoul and make it again in the future inshAllah. Above all, my sister loved it and said she wants to buy me more random ingredients to try! Enjoy :D
