Chicken kabsa

Ingredients

  • 1 whole chicken, cut into 8 pieces
  • 2 cups of basmati rice, washed and rinsed
  • 2 tbsp sunflower oil
  • 2 onions, diced
  • 4 garlic cloved, diced
  • 4 bay leaves
  • 6 green cardamom pods
  • 5 cloves
  • 2 cinnamon sticks
  • 2 black limes
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp ginger
  • 1 tsp cardamom, ground
  • 1 can of tomato sauce
  • 1 tomato, diced
  • 1 chicken stock cube
  • Optional: Pine nuts and raisins for decoration

Directions

I have tried making kabsa before, so I kept and removed ingredients that worked/did not work. For example, a previous kabsa I have made required orange rind, which I did not like in the kabsa. Please let me know if this recipe is authentic enough, or if there are any changes I should make.
  1. Place the oil into a pot and heat for a minute. Add the onions and garlic on medium to high heat, until the onions turn golden
  2. Add the bay leaves, cardamom pods, cloves, cinnamon, black limes, cumin, coriander, salt, pepper, ginger and ground cardamom to the pot and saute for 30 seconds
  3. Add the tomato sauce, tomato, and chicken stock cube to the pot. Mix well until the sauce thickens, then reduce heat to medium-low. Add the chicken pieces and saute for a minute either side
  4. Add water to the pot to completely cover the chicken pieces. Bring to a boil then reduce the heat to low and cook for 35 minutes whilst covered
  5. After the chicken has cooked, reserve the broth for use with the rice. In a saucepan, add the rice and enough broth from the chicken so that the rice is completely covered (usually 1 cup rice = 1 + 1/2 cup water) 
  6. Bring to a boil then turn the heat to low, and cook covered for 10 minutes. Meanwhile, place the chicken on a roasting dish in the oven for 5 minutes or until golden
  7. Place the cooked rice onto a serving dish, and arrange the chicken pieces on top. Garnish with the optional nuts and raisins

I decorated the dish with raisins, and served with greek yoghurt or salad for whoever wants. Enjoy :)
