Chicken pad thai

Ingredients

  • 375g flat dried rice noodles (found this in the world food aisle) - alternatively get the ready to use rice noodles
  • 3 tbsp groundnut oil (or vegetable oil)
  • 2 boneless chicken, cut into strips
  • 6 garlic cloves, peeled and finely chopped
  • 5 shallots, peeled and finely sliced
  • 2 tsp chilli powder
  • 1 tbsp vegetable oil
  • 3 eggs
  • 3 tbsp fish sauce
  • 3 tbsp tamarind sauce
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 375g beansprouts
  • 100g peanuts, roasted (I used cashew as had no peanuts)
  • salt to taste
  • coriander for decoration
  • lemon wedges for decoration

Directions

A dear friend requested I make pad thai, a very popular Thai dish. One of the good things about pad thai is its adaptability, you may wish to substitute chicken for prawn, beef or tofu. It is a quick delicious dish, bursting with flavours!
  1. Soak the rice noodles in boiling water, and set aside for 10-15 mins (until ready for use)
  2. In a large wok or pot, add the oil and leave to heat on medium flame. Add the chicken and cook until golden (increase the heat if necessary). Add the garlic and stir for a minute
  3. Add the sliced shallots and chilli powder, and mix well
  4. Drain the noodles, and add to the wok mixing over medium/low heat for a few minutes
  5. In a separate small pan, heat 1 tbsp of vegetable oil, then add the eggs and leave to cook. Once cooked, add with the noodles and mix
  6. In a small bowl, add the fish sauce, tamarind sauce, soy sauce and sugar. Mix together, then add with the noodles and mix
  7. Add the bean sprouts and add half the roasted peanuts. Fold the noodles to ensure all are coated, taste and add salt, soy sauce or sugar to adjust seasoning
  8. Transfer to a serving dish, top with the remaining peanuts, chopped coriander and lemon wedge

My sister said this is the best noodle dish she has ever tasted, my sisters absolutely loved it! It is so easy to make, so I highly recommend you give it a go! Enjoy :)
