Directions
These are really easy cookies to make, and they will be enjoyed especially by the young-lings :)
- In a small bowl combine flour, baking powder, salt and bicarbonate of soda
- In a larger bowl cream together the butter, sugar, egg and vanilla until creamy and well combined
- Add the dry ingredients from the small bowl to the large bowl, and mix until everything is well incorporated
- Using a small ice cream scoop (or a tablespoon if you don't have), form cookie and roll in sugar. Then place on an oiled baking tray (or put baking paper instead of oiling), keeping the cookies a few inches apart
- Bake for between 15-20 minutes, rotating the baking tray halfway
- When you remove the cookies, leave them to cool for around 5 minutes, and if you can resist temptation, leave them to cool completely before digging in :)
Although the picture isn't the best to make you think these are tasty, lol, the batch shown were made without ever thinking they would go on a blog, hence not perfectly done. Although, when you do make them make sure to not leave them too long in the oven. You will see on close observation they will have a sugar coating, which goes really well with the soft vanilla cookie interior. Do give these a go, and I can guarantee most kids will love them (my little sister sure does) :)
