Shepherds pie

Ingredients

For the filling
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 onion, peeled and diced
  • 800g minced lamb
  • 0.33 cup flour
  • 0.75 tbsp salt
  • 0.25 tbsp black pepper
  • 1 tsp paprika
  • 0.5 tbsp cinnamon powder
  • 2 tsp rosemary
  • 3 cloves garlic, peeled and minced
  • 1 tbsp ketchup
  • 2.5 cups water (adjust according to thickness needed)
  • 340gg frozen peas and carrots, thawed and drained
For the topping
  • 1kg potatoes, peeled and cut in quarters (a little more would be fine too)
  • 1 tbsp butter
  • 1 tsp salt
  • 0.5 tsp pepper
  • 1 pinch of cayenne
  • 0.25 cup cream cheese
  • 1 handful of shredded cheddar cheese
  • 1g yolk
  • 2 tbsp milk

Directions

This take on shepherds pie is an Irish classic. Thought I should keep the variety in recipes, and shepherds pie is known to be a yummy dish. If you use lamb meat, it is called shepherds pie...and if you use beef, it is called a cottage pie :)
  1. Melt the butter with the olive oil in a pot over medium heat. Add the onions and lamb then leave to cook until brown (around 10 minutes cooking)
  2. Add the flour and cook for a few more minutes
  3. Add salt, pepper, rosemary, paprika, cinnamon, ketchup and garlic, stir well for a few more minutes
  4. Add the water and stir, cooking for 5 minutes until it thickens up - taste and adjust seasoning
  5. Add the carrots and peas, tmix for a few more minutes, then transfer to a baking dish (22 x 33cm preferably), and smoothen down, then set aside
  6. To make the potato topping, boil the potatoes in some salted water until soft and tender, then drain well
  7. Add the butter, salt, pepper, cayenne, cream cheese and cheddar cheese. Mash well
  8. Mix the egg yolk with the milk, then stir it into the potato mix
  9. Add spoonfuls at a time of the topping onto the meat filling, then using a fork, smoothen it out over the meat mixture
  10. Place into the oven on 200 degrees Celsius for 25-30mins, then leave to sit for like 10 mins before serving
