Nutella Cheesecake

  • 1.25 cup digestive biscuits crushed
  • 90g unsalted butter, at room temperature
  • 2 tbsp nutella
  • 0.25 cup granulated sugar
  • 0.25 cup chopped hazelnuts, finely ground
  • 450g cream cheese, softened at room temperature
  • 1 cup icing sugar
  • 5 tbsp nutella
  • 0.5 tsp vanilla extract
  • 0.25 cup double cream
  • 0.5 cup double cream
  • 120g plain chocolate, broken into pieces
  • 1 tsp butter, softened to room temperature
  • Optional: Chopped hazelnut to decorate

Who doesn't like nutella? The sound of a nutella cheesecake was too good to resist, I knew it could end up tasting very rich, but still wanted to give it a try. The cool thing about this cheesecake is the fact its a no-bake recipe :)
  1. If you have a food processor, add all the ingredients for the crust and mix until everything is finely crushed
  2. Press the crust mixture into the bottom and one inch up the sides of a 23cm springform cake tin, which you have lined with cling film (to avoid the base sticking to the tin) and then place in the fridge
  3. Place the cream cheese and nutella into a bowl, and mix on a medium speed for around 2 minutes
  4. Add the remaining ingredients for the filling into the bowl, and mix for another minute or until a smooth mixture forms
  5. Pour this filling over the crust, cover the tin with a plate and set in the fridge overnight
  6. Around an hour or so before you want to serve the cheesecake, make the topping by heating the cream in a saucepan until it simmers
  7. Place the chocolate in a bowl and pour the heated cream over it, leaving to sit for a few minutes
  8. Whisk the mixture altogether until the chocolate has melted, and then whisk in the butter too till melted
  9. Pour the topping over the cheesecake, and place back into the fridge for at least another hour for it to set
  10. When ready to serve, remove from the springform tin, and decorate with chopped hazelnut if you wish

This was absolutely deliciiiiiooouuuussssss mashAllah!! I highly recommend you try this, honestly its not something you can miss out on. It isn't even too chocolatey, and the hazelnuts give an amazing added taste. Please do give this a go. Enjoy :)
