Chocolate cookies with oreo pieces

Ingredients

  • 100g unsalted butter, at room temperature
  • 75g dark brown sugar
  • 1 egg yolk
  • 0.25 tsp vanilla extract
  • 115g plain flour, sifted
  • 1 tbsp cocoa powder, sifted
  • 0.75 tsp baking powder, sifted
  • 50g chocolate pieces, broken into small chunks
  • 50g oreo biscuits, broken into small chunks

Directions

Now I have to be honest, this all happened rather randomly. I was planning on making chunky chocolate cookies, but whilst weighing my chocolate, I only had half of what I need. A light bulb in my head said ooo we have oreos, and out came the oreo biscuits, and in they went to the cookie mix. So here they are, delicious oreo chocolate cookies!
  1. Whisk together the butter and sugar in a bowl, until the mixture is creamy and well combined. Scrape off the sides and whisk to combine. Add the egg yolk and vanilla extract and beat together
  2. Add the flour, cocoa powder, baking powder, chocolate pieces and oreo pieces and mix together to combine well
  3. Make walnut sized balls and place onto a lined baking tray, leaving at least an inch between them. Press gently down on each cookie to flatten the top. Place into the oven at 180 degrees Celsius for 10-12 mins (keep an eye on them). Remove and leave to cool for 5mins before transferring onto a wire rack or straight into your tummy!

These disappear with a blink of an eye! Super delicious and so easy to make! Enjoy :)
