Moist decorated cake

For the cake
  • 225g unsalted butter, at room temp
  • 2 cups caster sugar
  • 4 eggs, at room temp
  • 3 cups self raising flour, sifted
  • 1 cup whole milk, at room temp
  • 1 tsp vanilla extract
For the decoration
  • 300ml double cream
  • 4 tbsp icing sugar
  • strawberries, sliced (or any fruit you like)
  • 1 tbsp nutella (optional)
  • Serving

I wanted to make a welcome back cake that was super delicious. This cake has a sweetness to it, and at the same time is not too crumbly, making it easy to decorate. Please note I was decorating this cake at 12 am - so I must admit, it does not look as neat/professional as I would like...but so long as the family were happy, and the cake tasted good - alhamdulilah :)
  1. Whisk the butter until light and fluffy, then add the sugar and whisk for a further 7-10 mins
  2. Add the eggs, one at a time, whisking to combine after each addition
  3. Add the self raising flour and milk in small amounts, alternating between the two whilst constantly whisking (a stand mixer would be handy for this). This could take a while so be patient
  4. Add the vanilla extract, and whisk until just combined, then divide the batter between two greased and lined 23cm cake tins. Bang the tins on the counter a few times to release any air bubbles (making a more level cake)
  5. Bake at 180 degrees Celsius for 30 mins (check at this point, if still hasn't finished, leave until done. This cake took 45 mins to finish - it will depend on your oven)
  6. Leave the cake to cool in the tin for 10 mins, then remove from the tin and wrap in cling film (to retain the moisture), and leave to cool on a wire rack completely
  7. For the decoration, whisk the cream until starting to thicken, then add the icing sugar (adjust quantity according to how sweet you want it), then continue whisking until thick (do not whisk for too long or you will get a buttery sort of taste). Place a third of the cream to sandwich the cake, then the remaining to cover the whole cake
  8. Cut thin slices of strawberries and decorate. For the writing, I reserved some of the cream and added nutella to it to give a different colour. It also gives a super yummy taste
