- Peel the butternut squash, then slice length wise. Using a spoon remove the seeds, and cut the butternut squash into chunks
- Place onto an oven tray, lined with foil. Add the garlic and drizzle a good amount of olive oil - get your hands dirty and mix to ensure the butternut squash is coated
- Place in a hot oven for 20 mins or so, or until the butternut squash is soft
Enjoy with a sauce of your preference if you wish, for me....it has to be ketchup :) This really is a delicious snack, and like you have seen, super easy! The good thing is substitute the butternut squash for something else if you want, sweet potatoes would be yummy, maybe even a pumpkin! Be creative - and let me know :) Enjoy!
