Thin, light pancakes

Ingredients

  • 100g plain flour
  • 1 pinch of salt
  • 2 eggs
  • 300ml milk
  • 1 tsp vanilla extract
  • 1 tbsp vegetable/sunflower oil
  • Any toppings of your choice: nutella, maple syrup, fruit, powdered sugar etc

Directions

I have made pancakes before (search pancakes), but they were the thicker type. I wanted to make a thin, light and delicious pancake - and this is exactly what this recipe will provide you with!
  1. In a bowl, add the plain flour and the pinch of salt. Mix with a spoon and make a well in the centre
  2. Add the eggs in the centre of the well, alongside a few tablespoons of the milk, vanilla extract and oil. Using a whisk, mix together the centre ingredients until well incorporated, slowly bringing in the flour mixture and whisking altogether 
  3. Once the mixture is well incorporated, keep mixing as you slowly add the remaining milk, continually whisking to ensure a light and fluffy batter. Once all the milk has been added, whisk vigorously to get a few bubbles and to ensure it is all well mixed. You should have a runny consistency
  4. Over a medium heat, place your pan. Place some oil onto kitchen paper, and rub the pan with the paper to lightly oil it. Using a ladle, spoon in the mixture - approximately one ladle and a little bit more should be enough to cover your pan, but that would vary according to the size of the pan you have used. Gently circle the mixture to allow it to spread evenly across your pan. Leave over the heat for 30 seconds, you will see bubble forming
  5. Loosen the edges, if needed, then flip the pancake over to its other side - leaving for a further 30-60 seconds, before removing and repeating the above step until your batter is all used up

You may wish to serve this with whatever topping you fancy. I used what I had on hand, nutella and maple syrup...but delicious fruit with maple syrup or a sprinkle of powdered sugar would have also been delicious. Which toppings do you like on your pancakes? Enjoy :)
