Vanilla cream cupcakes

Ingredients

For the cupcakes
  • 200g plain flour, sifted
  • 2 tsp baking powder
  • 200g caster sugar
  • 0.5 tsp salt
  • 100g unsalted butter, softened
  • 3 eggs
  • 150ml milk
  • 1 tsp vanilla extract
For the icing
  • 200g icing sugar
  • 1 tsp vanilla extract
  • 100g unsalted butter, softened
  • Optional: sugar sprinkles or any cake decorations

Directions

After being gifted a load of baking and cupcake books/equipment this eid, I could not help but try out this simply appealing cupcake recipe. One reason I thought I would give it a go is the ingredients are standard, something you probably will already have at home. Another reason I decided to make these is to try out my new piping set (first time I ever pipe!!)
  1. Place the flour, baking powder, sugar, salt and butter in a bowl. Mix together using your fingertips until the mixture resembles that of breadcrumbs
  2. In another bowl, whisk together the eggs, milk and vanilla extract together until well blended
  3. Slowly pour the egg mixture into the dry ingredients, whisking all the time
  4. Whisk gently until smooth, ensuring you do not over mix or the the cake will toughen (I literally did a 10 second whisk)
  5. Pour the cake batter into a jug to make it easier for you to handle when pouring into the cupcake paper cases
  6. Place cupcake paper cases into the holes of a cupcake tray, and then carefully pour the cake mixture into the papers, filling each one only half full
  7. Bake at 180 degrees Celsius for 20-25 minutes, until springy to the touch and a tester comes out clean
  8. Transfer the cupcakes onto a wire rack and leave to cool completely
  9. Whilst the cupcakes are cooling, make the icing by combining the icing sugar, vanilla extract and the butter in a bowl, whisking for 5 minutes (with an electric whisk) until very light and fluffy (store in the fridge while you wait for the cupcakes to cool)
  10. Once the cupcakes have cooled completely, either take a teaspoon of the frosting mix and place it on the cupcake, or transfer the icing into a piping bag
  11. Preferably use a piping bag with a star nozzle, hold the cupcake in one hand and use the other hand to pipe the icing onto the cupcake, starting from the edge and working towards the centre forming a peak
  12. Decorate the cupcakes if you wish 

The more I piped, the more I got the hang of it, but its clear this is the first time I use a piping bag!! But inshAllah with practice, decorating cupcakes will be better! So do give these a go, as they are fun to make and taste good. Enjoy :)
