Chocolate chip & walnut cookies

  • 0.75 cup white sugar
  • 1 cup brown sugar
  • 225g unsalted butter, softened
  • 1 tbsp vanilla extract
  • 2 eggs
  • 3 cups plain flour
  • 0.75 tsp bicarbonate of soda
  • 0.75 tsp salt
  • 3 cups chocolate chips
  • 1 cup chopped walnuts
  • Serving

My little sister really wanted a treat, and I had chocolate chip cookies on my 'to do list', lol, so I thought why not give these a go..
  1. Place the sugar and butter in a large bowl, and whisk until creamed together
  2. Add the vanilla extract and eggs, and mix together well
  3. In a separate bowl, combine the dry ingredients, then gradually add them to the other mixture, mixing with a large spoon to combine, until you have a well combined mixture
  4. Stir in the chocolate chips and walnuts
  5. On a non-stick sheet, roll the dough into golf-sized balls, and place around 2 inches apart
  6. Place in the oven at 180 degrees Celsius, for around 15 mins (but keep an eye on them from 10 mins onwards)
  7. Place on a wire rack to cool

When making these, I got worried that the flour seemed like such a large amount, but just keep mixing and it will be fine. Also, the added walnuts to these cookies give them an even better taste. These are definitely a treat, especially for those with a sweet tooth. Enjoy :)
