Garlic and herb marinated salmon

  • 4 garlic cloves, peeled and minced
  • 2 tsp salt
  • 2 tsp dried basil
  • 1 tsp black pepper
  • 0.5 lemon (+ extra sliced lemon)
  • 6-8 tbsp of olive oil
  • 3 tbsp freshly chopped parsley
  • 4 fillet of salmon

A lot of people don't like the idea of salmon, or have never found it delicious. For this reason I think you will love this recipe, as the marinade is just so yummy, and the salmon comes out lovely and perfect. Best of all, it is so simple and easy to make, minimal effort yet amazing outcome. 
  1. 1) In a small bowl, add all the ingredients except for the salmon. Mix well.
  2. In a dish, add the salmon fillets, and pour over the marinade. Mix well to ensure the salmon pieces are well covered. Cover with cling film and place in the fridge to marinate for one hour.
  3. Place each fillet along with a few tablespoons of marinade into individual pieces of foil. Place a slice of lemon over the salmon piece and wrap up the foil to form a parcel (ensuring you seal it well to avoid the marinade leaking out). Double wrap with another piece of foil for each individual filet parcel.
  4. Place into the oven at 200 degrees celsius for 35-40mins. Serve whilst hot and add any remaining marinade over the salmon that was left over in the parcel

It is that easy, and super delicious! I served it with feta salad, boiled and flavoured vegetables, boiled potatoes and honey roasted pumpkin.
