Banoffee pie

Ingredients

  • 300g biscuits (I recommend oaty ones, like Hob Nobs)
  • 60g butter, melted
  • 1 can Caramel (I bought the Nestle Carnation one)
  • 3 large bananas, peeled and sliced
  • 200 ml double cream
  • 1 tbsp sugar
  • 1 handful Grated chocolate for topping

Directions

When life gives you bananas, why not make banoffee pie?
  1. Crush the biscuits in a food processor, then add the melted butter and pulse until combined
  2. Press the biscuit mixture into a 24cm tart tin with a removable base and make an even layer
  3. Place the tin on a baking sheet and cook for 10-12 mins, until lightly roasted and set
  4. Leave to cool, then gently release from the tin and place the base on a serving plate
  5. Spread the caramel over the biscuit base and leave in the fridge to chill for 1 hour
  6. Meanwhile, make the cream by whisking together the double cream and sugar until a cream consistency is formed (do not over whisk). Place in the fridge until ready to use
  7. Arrange the banana slices over the toffee, then decorate with the whipped cream and chocolate

This was a definite treat, not difficult to make yet looks and tastes great. Enjoy :)
