When life gives you bananas, why not make banoffee pie?
- Crush the biscuits in a food processor, then add the melted butter and pulse until combined
- Press the biscuit mixture into a 24cm tart tin with a removable base and make an even layer
- Place the tin on a baking sheet and cook for 10-12 mins, until lightly roasted and set
- Leave to cool, then gently release from the tin and place the base on a serving plate
- Spread the caramel over the biscuit base and leave in the fridge to chill for 1 hour
- Meanwhile, make the cream by whisking together the double cream and sugar until a cream consistency is formed (do not over whisk). Place in the fridge until ready to use
- Arrange the banana slices over the toffee, then decorate with the whipped cream and chocolate
This was a definite treat, not difficult to make yet looks and tastes great. Enjoy :)
