Chewy chocolate chip cookies

  • 1.25 cup granulated white sugar
  • 1.25 cup dark/light brown sugar
  • 340g unsalted butter, at room temperature
  • 2 tsp vanilla extract
  • 3 eggs, at room temperature
  • 4.25 cups plain flour, sifted
  • 2 tsp bicarbonate of soda, sifted
  • 0.5 tsp salt
  • 400g chocolate chips (more or less as you wish)

For some soft and chewy delicious chocolate chip cookies, which hold their shape and are so easy to make - this is the perfect recipe for you.
  1. In a large bowl, beat together, with an electric whisk, the granulated sugar, the brown sugar and the butter until the mixture is light and fluffy
  2. Add the vanilla extract and eggs, and whisk until it is well combined
  3. Add the flour, bicarbonate of soda and the salt and fold in together using a wooden spoon
  4. Add the chocolate chips and combine well into the mixture
  5. Place baking paper onto your baking tray, and either use an ice cream scoop, or take a heaped tablespoon of the cookie dough, then place onto the baking paper, approx 2 inches apart
  6. Place into a preheated oven at 190 degrees Celsius for 8-10 mins or until it becomes a light golden brown colour
  7. Cool for one minute on the tray before transferring onto a wire rack to cool

They are so soft and chewy and delicious!!! You will love how incredible they taste and how easy they are to put together. No resting time or fridge time, just put them straight into the oven! Easy and fabulous! Enjoy :)
